- 1 cup SunRice Black Rice
- 2.5 cups water
- 1 Vanilla Bean
- 1/2 cup Coconut Cream
- 2 Bananas
- 3/4 cup Brown Sugar
- 1/2 cup water
- 50g Unsalted Butter
METHOD:
- Boil together rice, water, and vanilla bean until tender.
- Place sugar, water and butter over heat and boil until thick and glossy.
- Stir half of the mixture through the rice.
- Caramelise the bananas.
- Serve rice, drizzle coconut cream and remaining caramel and bananas.
