Black Rice Coconut Pudding with Caramelised BananasRecipe submited by SunRice Coly cookoff contestants Marg and Diana Burge
INGREDIENTS:
  • 1 cup SunRice Black Rice
  • 2.5 cups water
  • 1 Vanilla Bean
  • 1/2 cup Coconut Cream
  • 2 Bananas
  • 3/4 cup Brown Sugar
  • 1/2 cup water
  • 50g Unsalted Butter

METHOD:
  1. Boil together rice, water, and vanilla bean until tender.
  2. Place sugar, water and butter over heat and boil until thick and glossy.
  3. Stir half of the mixture through the rice.
  4. Caramelise the bananas.
  5. Serve rice, drizzle coconut cream and remaining caramel and bananas.
